    Ingredients for the dough:

  • g flour
  • g water
  • g Preserved milk (powder)
  • g yeast
  • g SENNA Back or SENNA Back ZERO Palm (margarine)
  • g sugar (icing sugar)
  • g yolk (4 pcs)
  • g stollen spices
  • g salt
  • g SENNA Aroma lemon
  • g vanilla sugar 1:10
  • g grated nutmeg
  • g cardamon
  • g cinnamon
  • g raisins/sultanas
  • g citronate (candied lemon peel)
  • g almonds
  • g aranzini
  • g Rum
  • g Vanilla icing/confectioners' sugar for dusting

  1. Mix the fruit (candied lemon peel, aranzini), almonds and sultanas with rum and leave to infuse for a few hours.
  2. Mix all the dough ingredients together, let rest for 20 minutes, knead again briefly and incorporate the fruit.
  3. Leave to rest for another 20 minutes, weigh out to the desired size and and grind to a ball.
  4. Then shape into stollen.
  5. Leave to rest at bakery room temperature (min. 24°C) for 15 minutes.
  6. Bake at 175°C for approx. 40-50 minutes.
  7. After baking, brush twice with melted SENNA Goldfritter and sprinkle with vanilla icing sugar.
